Hand-drip coffee, more commonly called pour-over in English, is a brewing method in which you pour hot water over a bed of ground coffee and let gravity pull the water through a filter. Because no machine pressure is involved, the resulting cup tends to be clean and transparent, letting the character of the beans come through clearly. The real appeal, though, is control.
